Lavish one hour Reception at 7:30pm………..Partake in mini crab cakes with remoulade sauce, cajun fried oysters with horseradish sauce and cripsy bacon wrapped quail.
Followed by Delicious 4 Course Dinner at 8:30pm……….Seated in the beautiful Nautilus Ballroom – This is a culinary adventure created by our Executive Chef Corbett Rourk and his team!
Begin with poached lobster truffle roulade, asparagus, pickled mushrooms, fennel puree, and a salad with orange vanilla vinaigrette.
As you finish up the first course and move on to the second, you can enjoy champagne and grape terrine, petite greens, sun dried tomato puree, and roasted golden beets with white balsamic vinaigrette.
The third course includes prime filet mignon, braised veal, oxtail epigram, fondant potato and red wine, parsnip puree, pearl onion confit, and truffle jus.
Hopefully you’ve saved room for dessert! Satisfy your sweet tooth with a decadent chocolate mousse cake topped with raspberry and chocolate sauce.
Following your amazing dinner is a night full of dancing and live music performed by the Top 40 Band N’Tranze.
N’Tranze is more than just a party band and is a group of focussed technicians and top-notch entertainers. They specialize in R&B, beach music, motown, 70’s, 80’s, 90’s as well as the current hits of today! N’Tranze will have you rocking and dancing the night away as you enjoy the premium spirits and wide selection of wines available for sipping and toasting during the duration of the evening.
And at midnight, bring in the New Year with party favors, a champagne toast and a grande balloon drop!
After you’ve partied the night away and are ready to relax, you can head back to your Grande Guest Room. This oversized guest room features either 1 king bed or 2 queen beds. Enjoy a quiet toast on your private balcony or unwind in the relaxing shower complete with a rainshower head. You can end the night by crawling into bed and snuggling up as you say hello to another year.
